Gardens and culinary classes in schools

It is clear that well-designed gardening and cooking programs in public schools will encourage the holistic growth of American children—meeting most of their physical, social and intellectual needs. Furthermore, "Edible Education" will address the growing health crisis in obesity and diet-related illnesses among adolescents, ensuring that the current generation of American children will have longer life expectancies than their parents. In order for the American public school system to be relevant in the 21st century it must address the key health and sustainability issues impacting society. A K-12 school curricula integrated with gardens and culinary education is a step in the right direction. From my experiences as an educator, if young people grow and cook healthy food they will also eat it.
